WATERMELON COOLER

VEGAN / GLUTEN-FREE / SATTVIC

During the hot summer months watermelon is my go to along with coconut water. Both keep me cool and hydrated. In general melons are best eaten solo. If mixed with other foods like diary and grains they can cause major indigestion like gas and bloating. I read somewhere that “melons party alone” and found that saying easy to remember, lol. This recipe has a few variations, so feel free to experiment and stay cool :)

Serves 2

INGREDIENTS

1 heaping cup of watermelon, chopped

1-2 cups coconut water (or filtered water)

5 mint leaves

squeeze of lime

pinch of cardamom

pinch of Himalayan rock salt

INGREDIENT SUBSTITUTIONS / ADDITIONS

Basil, cilantro, ginger, coriander powder, cumin powder

DIRECTIONS

Add all ingredients to a blender and blend until smooth. You can easily change how thin or thick this drink is by adding more or less watermelon and water. If your looking for a lighter variation, filter out pulp through a sieve before drinking. Skip the ice as that weakens digestion.
